Eats: Salmon Burger and Sweet Potato Cakes

Mix 2 cans salmon (drained) with breadcrumbs (toasted bread in blender with basil, oregano, and pepper), onion, chopped red bell peppers, and 2 eggs. Form into patties.

Meanwhile, peel and cut up sweet potato, boil in water until sweet potato is medium soft. Brush with a mixture of 1 tbsp grapeseed oil and 1 tbsp melted butter. Sprinkle on spice mixture:

1 & 1/2 tablespoons light brown sugar
1/2 tsp sea salt
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp paprika
1/4 tsp onion powder
1/4 tsp chipotle pepper
1/4 tsp garlic powder

Coat both sides. Bake in oven at 375 for 10-15 minutes each side until sugars crystallize.

While sweet potatoes are baking, heat grapeseed oil on pan and sautee burgers until browned on both sides.

 

Enjoy. (I prepped the salmon burgers the night before. Made this a super easy supper.)
